When using the magic tool to select an area then delete the area I keep getting the deleted area filled black, how do I change this to white?

When you delete it, should be transparent. Are you seeing light and dark gray squares? It can turn black if you save to .jpg or other format that does not support transparency. If this is the case, run for example the "Blend with background" operation from the menu prior to saving and choose white color.
